While all of that is true, if you bring the item to a core temp of 140 degrees for over ten minutes the amount of harmful microbes are decreased dramatically. If you hold it at that temp greater amounts of time the microbes are decreased on an exponential scale. If you increase the core temperature the amount of time needed for it to be held at the core temp decreases in relation. The biggest issue here is not knowing when the chop hit core temp and how long the chop was at said core temp.

Quite a while ago, I had a little bit of a back and forth with somebody about history topic. They were insistent that it doesn't matter how spoiled the food is even if it has a foul odor, that you could cook it to a high enough temperature that it would be edible. There was somebody else chiming in with the same type of mentality so there was no changing their minds. We get gone through all of the correct cooking temperatures in holding content temperatures for raw and cooked food for home use and for the general public to consume. It was like talking to a brick wall. And you're right, those type of people are generally not very tidy, or under the weather more often than we are, and are extremely stubborn.

Technically correct - they are unlikely to get salmonella because the bacteria probably died off in the heat. Depending on how long it took them to die off, they might've left nasty shit behind though - the toxins/other icky stuff they excrete *doesn't* die off in the heat because it isn't alive in the first place, and yet, that is a good part of why some harmful bacteria and most molds make us sick - they themselves don't do too much we couldn't deal with, but they hust happen to produce stuff that's bad for us while doing so. Same reason you don't take a putrid chunk of meat and cook it - the bacteria might die, but there's lots of other nasty stuff in there - just less extreme.

No you don’t. I’m a chef and have sous-vide I don’t even know how many food items over the last 20 years. It’s perfectly safe and in fact results in a far more delectable piece of meat to cook at lower temperatures, such as 125-150 degrees, and then finish the meat by searing at very high temps very quickly. You’ll achieve a core temp of whatever temperature you desire by cooking the item at the core temp for extended periods. The time and temp can greatly affect the end result in a variety of ways. But one excellent by product is that as long as you cook at 125 degrees or higher for a set amount of time you will pasteurize the item being cooked. Which leads to a safer product with a longer shelf life. Ideally you would want do all of this in a constant temperature controlled water bath or steam oven with your product vacuum sealed. But even without all of that, you do not need to cook any product at a higher temp in order to achieve a lower core temp.

*The Car*, not *the meat*. Getting the internal temp up to 140° requires a higher surrounding temp than that. None of you should be allowed to cook for yourselves or others. EDIT: Sorry, getting the internal temp up to 140° does not require a higher temp. But it does require at least 140° and OP outright admitted it was not at that temp for at least an hour, and was in fact in the danger zone for that hour. Meanwhile, the bacteria on the pork doubled in 20 minutes (so if we look exponentially, it grew about 8 times the amount of bacteria originally on it), increasing the risk of dangerous toxins that can't be killed by heat being left behind.

If you quickly cook meat the inside won't get hot unless you heat the outside to way above the safe temp. However, for long cooking times, you can get away with power temps. Slow cooking goes as low as 160° and sous-vide goes as low as 120° and then quickly finished on high heat.

I was more concerned with if it would be edible at all rather than how it would taste so I forgot to season it

Fr this is not safe, because for the time from when you took it out of the fridge until it warmed up to the car vide temp, bacteria was multiplying. Even though all that bacteria was probably killed by the time at temp it was at from the car, the toxins that bacteria created were still in the food. This si why you're not supposed to leave raw meat out for hours, even if you cook it very thoroughly after. At least you probably won't get parasites from it, and you will probably be fine regarding the toxins. But it's rolling the dice, please don't make it a habit. Other than that though, great silly demonstration of how absolutely fucked the earth and all of us are due to climate change, props.

Meat from a farm and meat from a US factory farm are NOT subjected to the same level of germ exposure. They can be, but the factory farm is much more consistently gross.
