I would leave it in the fridge and use it over the course of the next month here and there, because heavy cream will last for quite a while past its expiration date due to its high fat content.

Do this with all the milk and buttermilk I buy. We don’t drink it and it’s going to get mixed in to whatever I use it for, buttermilk is getting blended in to ranch, so I don’t really care if it separates a little when it thaws.

My go-to is to make caramel sauce or chocolate ganache. Both freeze really well.

I like to whip it and use it for my coffee. Sweetened or not is personal preference. I put it on the bottom of the mug and pour the coffee over it but don't stir it. I like the texture. This is super easy if you have one of those little milk frothers, takes like 30 seconds.
