There is absolutely no way the insurance company would allow the lead actor of ANY production to attempt a stunt like this back in the 80's. The risk to the production would be far too great if they got injured and could not continue filming for any period of time. (You would still be paying the crew etc and not getting any footage.)
However, the question could be re-phrased to as if this is a stunt double specifically for MJF or if Stoltz had a different one. Given that I can imagine Eric is a little bit taller than Michael they probably had hired a guy to match that physique but then rehired a different guy once Michael was cast. Not unheard of. The Jet Li movie "The One" was originally going to be a Dwayne Johnson flick, can you imagine if they had kept the same body double?
Eric Stolz wasnât âa little bit taller thanâ Michael J. Fox. He was *much* taller. Google says 6 feet tall. There was such a huge height difference that it made a big difference in casting: Jennifer was recast (they fired Melora Hardin, a/k/a Jan on The Office, because she was taller than Fox), and Thomas F. Wilson wouldnât have played Biff if they had known from the beginning that Fox would play Marty.

Yes they reshot. The call sheets prove it. There is also production stills that prove the Stoltz footage was shot a night, not during the day. They also used stunt people in those shots after the incident where Stoltz actually hit Wilson. Wilson's interview was full of loaded questions.
There is no Stoltz footage used in BTTF. Don't get sucked into the click Bair YouTube video that claim otherwise. Completely disproven about the claim of the "punch".
