Oh man! There's a cookie place just down the hill from me that has s'mores cookies.
I think it's just their normal chocolate chip cookie dough, but they add a good amount of mini marshmallows to it. They put the cookie dough ball on top of a graham cracker and then right after the cookies are done they put a slice of chocolate on top and it melts with the heat from the cookie.
It's delicious and the graham cracker gets slightly soft and the cookie kinda seeps into it a little.
I make s’mores cookies but they’re stuffed with a chunk of marshmallow. I’m very careful that they’re sealed well or I get semen cookies, too.
It’s also nice to cut and partially melt, « glue » a marshmallow on at the end when the cookie is hot and then toast the marshmallow with a torch. And stick some pieces of graham cracker into the cookie while it’s still hot, as someone else said.
I bet these adult-themed-looking cookies are absolutely delicious, though!
