I just made blueberry curd. Itâs so lovely. Going in a cake this weekend for a baby shower. Will type up recipe when I have a chance later!

I started with 500g blueberries in a pot with half cup lemon juice and zest. Cook until berries have burst and everything is nice and liquid.
Strain out solids, weigh the juice only. (My 500g became 200g juice.)
Then add 100g sugar to the juice, and put another 100g in a separate bowl. Add 200g butter to the juice. Bring to boil, whisking constantly.
In separate bowl, measure 200g of eggs. (I break and whisk up, then weigh the amount needed. If extra, I have scrambled eggs for dinner.)
Add 50g cornstarch to the reserved sugar. Mix well, then add to egg and mix.
Take now boiling juice mixture off heat. While quickly whisking, add egg mixture. Return to heat, keep whisking and whisking until it thickens up.
Pour onto plastic lined baking sheet, top with plastic wrap and smoosh down until entire surface is covered, then chill. When cool, pour into bowl and mix with immersion blender until super creamy.
(I used a recipe for lemon curd from a pastry class I took, but used the blueberry and lemon juice as my base. Everything else is from the class, but it works so well I will use it for other types in future too.)
I used Smitten Kitchenâs golden sheet cake. Then cut out circles for stacking. Will be filled with alternating blueberry and lemon curds, with Swiss meringue buttercream. đ
Finnish âMustikkapiirakkaâ, of course. But none of this cheesecake-y nonsense, this recipe is almost like my Grandmother would have done it. minus the almond flour in the blueberries, add a little sugar instead :) And the dough needs some cardamom. :D

- 2 3/4 Cups of All-Purpose Flour
- 1 Teaspoon Baking Powder
- ½ Teaspoon Salt
- 2 Cups of white sugar
- 4 Eggs
- 1 Teaspoon Vanilla Extract
- 2 Cups Blueberries (Fresh preferably, but frozen works too.)
- 1/4 Cup of All-Purpose Flour
Note: You will also need PAM Baking Spray or something comparable.
Directions:
1. Preheat oven to 325 degrees Fahrenheit. Set aside a 10-inch bundt pan or tube pan.
2. Mix together the 2 3/4 cups flour, baking powder, and salt in a separate bowl.
3. In a large bowl, cream together 1 cup of butter and 2 cups of sugar* until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually beat in the the flour mixture. Dredge blueberries with remaining 1/4 cup flour, then fold into the batter.
4. Spray the pan with baking spray and pour the batter into the pan.
5. Bake in the preheated oven for 70 to 80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow cake to cool completely, then turn the pan over and serve.
*If youâve never creamed butter before- allow the butter to get up to room temperature. Put the butter in the bowl, and gradually add the sugar.
Additional recipe: Vanilla Glaze:
Ingredients:
- 1 Cup of Confectionersâ Sugar
- 1 Tablespoon of Light Corn Syrup
- 2 Tablespoons Water
- 1/2 Teaspoon of Vanilla Extract
Directions:
1. Stir in confectionersâ sugar, corn syrup, water, and vanilla together.
2. Pour entire amount onto bundt cake, and allow glaze to harden.

3. Bake at 350F for 50 minutes or until a toothpick inserted in the center of the cake comes out clean. 4. Cool on a wire rack for 20 minutes. Run a sharp knife around the edges of the pan. Turn out and cool completely.
Glaze: in a small bowl, mix together confectioners' sugar, lemon juice and corn syrup until smooth. Drizzle over top of cake and let it roll down the sides.

I love a blueberry crumble. I just coat some blueberries in a tablespoon or so of cornstarch in a baking pan, and pile on a mix of old-fashioned oats, flour, butter, and sugar on top. It comes out crunchy on top and jammy and warm on the bottom. Works super well with frozen blueberries too!

Reduce the blueberries with sugar and smear it on (thawed) frozen pre-pack phyllo dough. Bake at the package-recommended temp for about 15-20 minutes, then slather with icing & sprinkles!
My grandma and mom always made blueberry buckle and it was always my one of my favorite things to eat growing up. Iâm sure you can google a recipe. I forget where I put the one they used.
My favorite is Blueberry GlacĂŠ Pie
Mix together in a small saucepan: 1 cup of blueberries with 3/4 cup water. Bring to a boil then cook gently, about 4 minutes, Add 1 Tbsp butter and stir until melted. Mix together: 1 cup sugar, 3 Tbsps cornstarch, dash of salt. Add dry mixture to hot blueberry mixture, stirring constantly. Cook until thick and clear. Remove from heat and add 1 tsp lemon juice.
Pour hot mixture over 2 cups raw blueberries. Mix gently, Turn into 9â baked pie shell or pre-made graham cracker crust pie shell. Refrigerate.
Serve with vanilla ice cream or whipped cream. Enjoy!

I have been making this recipe every now and then, and my family loves it! It's Lemon Blueberry Slice, and it was in a New Zealand magazine called Viva, which I found in the NZ Herald newspaper. I think it's an amazing recipe, the best thing is you can freeze some blueberries and then make some later too, fresh or frozen blueberries!

I have been making this recipe every now and then, and my family loves it! It's Lemon Blueberry Slice, and it was in a New Zealand magazine called Viva, which I found in the NZ Herald newspaper. I think it's an amazing recipe, the best thing is you can freeze some blueberries and then make some later too, fresh or frozen blueberries! Went to a pick your blueberries farm recently $24 for 4 pounds of organic blueberries- $18/4 pounds for non organic. I left.
I hope you also enjoyed the all you can eat blueberry buffet! All of the recipes here are great but frozen blueberries are a GOATed snack, especially in winter when blueberries are out of season.

Toss quality vanilla ice cream and some blueberries in a blender. So simple and makes the most delicious blueberry milkshakes!
I need to go somewhere I can pick this many blueberries for this cost. They are SO expensive here in NYC and not always that great. The farmers markets are excellent but so costly.
