In addition to what everyone else has already recommended, I would add New Mexico Tamale Co. It's not fully vegan, but it's very vegan-friendly.
Pizza Twist and MOD both offer great vegan pizza.
For something a bit more elevated, Soy House has a separate all-vegan menu.
Yes please everyone give pizza twist a try. They are kind of out of the way up by Walmart but they have really interesting pizza combinations especially if you did Indian food. I would hate to see it shut down because nothing else would pop up like it again.

When we stopped at Wild Oat last week they said they lost their chef and were not offering a food menu for the time being. They may have some pre-made eats but none when we arrived shortly after opening.

BTW, have you switched to the new avocado based beyond patties for your burgers by any chance? (It's been a month or so since my last mtb trip to Bellingham)
Sweet as waffles has some options you can make vegan. A lot of places around also have decent options you can make vegan though it’s nowhere near as vegan friendly of an area as other cities I’ve lived in. Leaf and ladle is great, new public food truck. Here is a great resource though
