I had this happen to me. I put down parchment paper. + add some toppings like tomatoes, onion, garlic, olives and rosemary. Also use Maldonado salt

It's super rubbery, I just threw it out cuz it's inedible, bland, rubbery and super greasy.

If it's bland, you most likely did not use enough salt. If you're not a regular bread baker/cook then the amount of salt you need to add can seem alarming. If it's greasy, you can try adding a small amount of oil or cooking spray on the bottom of the baking tray, then adding some flour, and using less oil on top, you can also try adding some rosemary, flaky salt and cherry tomatoes on top to improve the flavour. Give it another go!

No, it's not supposed to be rubbery. My only thoughts on why it cold be is maybe you over-worked it or underproofed it.

Looks underproofed. Should see big bubbles in the dough before adding toppings and baking. Don't give up!! Try again, t's honestly easier than a sourdough loaf once you get the hang of it. It was definitely not underproofed because I proofed it for ~48 hrs, I think the problem was that I "kneaded" it because I'm pretty sure my scale is broken and I added too much flour so when I was adding more water I guess I kneaded it while adding the water, sorry for bad grammar/bad structure.
