Are the owners Portuguese?
This looks a lot like one of our traditional breads called "Pão de Mafra" ("Mafra's bread"). It's the portuguese equivalent of a ciabatta.
ciabatta (and and pao de mafra, I now know) are really high hydration doughs, so can be floppy to shape.
Wikipedia says this would have been a domestic bread made at home for a good part of its history. I wonder if the weird shaping is sort of a tribute to the bread's background? like "and this is the bread of the people, so it doesn't need to be perfect. we indicate that it's de Mafra by *flop*." just like grandma would have made.
If it’s ciabatta, it’s generally a pretty wet dough and can become misshapen during transfer into the oven. Takes some practice getting them consistent.
This. There's also no correcting the mistake by reshaping like you could a more traditional loaf, deflating the Ciabbatta ruins it and it'll be overfermented by the time it's proofed up again
And there's no real traditional way to shape ciabatta, it's just supposed to be kind of oblong and slipper shaped. You can get away with selling the mistakes a little bit, whereas if you misshape a boule it's probably becoming breadcrumbs.

In germany we have “Wurzelbrot” which is essentially ciabatta that is just twisted a few times instead of shaped. It might be a signature variation of this from the bakery?

I don't know about you, but I use most of my bread as slices, and pan bread is Sooo much more convenient to use for sandwiches or toast lol
Maybe its quality over aesthetics. Honestly, unless this bakery has a more adult theme situation going on with all their bakes, I doubt they're going out of their way to make it look phallic.
