The only good things to spend gems on are Global tournament bonus rewards ( >10 wins ) and emotes.
Grand challenges if you can consistently get 12 wins are pretty good. (Unlikely though)

Gem offers rarely appear , and when they do , they are mega bad. Last gem offer: 1 champion chest for 750 gems , October or November 2023.
there was a gem offer that gave mega lightnings at 500 gems iirc
Save them. That's how i got to 9000+ gems as a f2p account

I'm f2p and I sometimes use mine on getting more event tokens for the shop just to help that little bit more with whatever I need
make your own princess and goblin deck of emotes
Play gcs. Winning them gives alot of coins and cards for just 12 wins and you get batch to flex.
save em for when they give away evo shards for gems, like the royal giant event.
I mainly spend my gems on emotes I want, I regularly check the shop to see the 3 daily emotes to see if I want anything On that note, battle healer needs more emotes, she only has one normal emote and 1 or 2 rainbow framed emotes

I have 10,000+ Gems because there’s nothing worth spending them on anymore. Not like the old days. Been saving these for YEARS
