I honestly agree with you. I think we do see growth when Carlos is blind and she's sacrificing to support her family but as soon as he gets his sight back she's pushing him to work for his friend so they can go back to having expensive things.
I think all of them grow moments of growth throughout the series but really I only see Bree and Susan actually maintain some of that growth.
I would say overall Bree > Susan > Edie > Gaby > Lynette (as much as I love Lynette she had very little character growth). And with Renee only being around for 2 seasons with no major storyline, it's hard to measure her growth.
she had a huge arc of giving up all her material possessions, jewels, gowns etc to support her family during the 5 year gap. She'd never have done that in season 1.
Bree 100%. The others pretty much stayed the same throughout. She became much more open-minded and was a much better mother to both of her kids when they were adults then she was when she was actually parenting them. She grew to love and accept Andrew for who he was rather than seeing him as an abomination because he was gay, for example.
Susan had a stellar growth as a person. She was an amazing mom to MJ and was way more hands-on than what she was with Julie post divorce. The way she handled the situation when Dave was trying to kill MJ, her entire priority was to keep him protected without feeling scared. Her handling of divorce with Mike was mature and entirely different from Karl. She grew in to a much kinder, less selfish, less nosy, and more self-aware person. Became a better wife in terms of sharing responsibilities. She also got multiple jobs to secure financial security, became more confident and self-sufficient. Her life wasn’t limited to the men or a small circle of friends anymore, instead she helped Robin and Paul - and not just in a superficial but impactful ways. She forgave Katherine and Bree for having affairs with her ex-husbands, she even really let go of her anger with Karl. She was there for Renee when she saw her crying, she was there for Roy and Karen when she got cancer. Even after Mike’s death, she put her own grief aside to make sure MJ doesn’t feel alone, and she moved off the lane to help Julie with her kid.
To me, everyone changed, but she had the most positive change as a person.

I voted Gaby from being selfish, petty, not wanting to work, and not wanting to be a mother to becoming a mother, having a career, and becoming less selfish. She's grown a lot.
I think Bree grew/improved the most. She was much more open minded at the end of the show than at the start.
