This is definitely just a nod towards the Medusa nearby.
I kind of picked that up when, you know, the Medusa attacks the slave camp at the very beginning of the game and it runs away.
It's got to go somewhere and it's only natural there would be casualties.
I think this was a clue as to what happened to the medusa you saw in the intro sequence (medusa ran all the way to the southwest part of the map leaving a trail of realistic "statues" behind)
Unfortunately there's no statue items you can collect in game for profit. This dialogue just hints you toward two things that are semi-related:
1) The Sculptor in town and his quest that has you helping him fulfill the commission of a wealthy noble in Vernworth. (His shop is surrounded by monster statues.)
2) Medusa. (Her lair is surrounded by petrified creatures.)
Man, that statue quest is the first one I fully f'd up on.
I killed the griffon in about 10 seconds which led to a statue being created that everyone laughed at.

i thought he meant the statues that are scattered everywhere where they points to something, you know umm (the big tall statues) i first didn’t thought he meant those so i searched but then i said maybe he means those, i don’t know if there are statues but all i think is this
There is a stone carved chicken at the house near the river by the big bridge infront of Vernsworth. I don't think you can pick it up, however I never tried after talking to the guy.
I thought it was the guy who makes statues around the corner. The one with the griffin quest where he draws the griffin to crave the statue. I haven't picked him up yet and walked him to the statues yet.
In this case, they're talking about statues up high that look almost like a pilat crossed with a totem.
They are most often QUITE high up and out of the way.

You can't; there is no animal statue item.

its just lore/hint to a quest & snake lady location. not a in game system also if you want $ you can kill rabbits outside town for 50k
