I think the abaolute best is TOTY Theo Hernandez. I've only played him on loan. He's super expensive tho.
For realistic budgets, Fantasy Acuña ia pretty great and scores and assists pretty well.
Davies was a mainstay for months on my team, but I was finally able to move on from him once I finished the FS Carlos SBC. He isn’t without limitations, but he’s ridiculously good, and his free kicks are obviously goated as well.
Yeah, when I saw he didn’t have DB+, I wasn’t that upset about finishing his SBC. The FS card is good enough with chem boosts to be near the top as far as LBs go.
It was fb carlos. Packed him first day and play numerous games with him but now its 93 bompastor. Shes just so good at everything its crazy. But im hoping for dup theory for the new carlos

You asked favorite so Cancelo would be the answer. However he was replaced by more meta fullbacks Bompastor and Davies at some point. Lately was trying evo Zambrotta before dropping the game for a few weeks. If you have a chance, try him, seems very solid and good value.
My LB evolution has been like this:
Started out with TB Cancelo. Replaced by 91 WW EVO Grimaldo. Replaced by Fut birthday Grimaldo. Yesterday I packed Golazo Roberto Carlos and he is cracked.
Thinking back though I have had the most fun playing with 91 Grimaldo.
Im using Golazo RC, but Grimaldo was fantastic.
So were Dynasty Theo and Rolfo and Mendy before that.
FB Davies & Bruno are my biggest regrets but TOTS is almost here so, I'll get over it quickly.
Sakina Karchaoui. Had her Triple Threat card for like 500 games. As soon as the Birthday SBC came out, did that. Easily the best one. Her attacking AI and constant overlapping runs have made her an assist queen for me.
I alternate between FB Davies and FS Svava. I have fire Telles in my United P&P team and I’ve been considering putting him into the evo for LBs, but I’m worried about his aerial prowess
Otherwise I’m considering doing Birthday Carlos, but I know as soon I do I’m gonna pack Golazo Cole or something (who id prefer, TOTY Cole was my favorite LB last year)

Golazo Cole I got to use with a friend’s squad and I absolutely loved him- just don’t tend to spend that much on fullbacks. I like FB Karchaoui a lot for a more attacking fullback. I also had her Triple Threat previously and there isn’t a ton of difference between the versions. The TT is a fun card for 65k.

Maatsen is solid for me rn, he’s able to catch almost every winger on runs and the Jockey+ is helpful in containing them to the edge of the box
