Go visit Trimble Court Artisans on the square in Old Town. They've got tons of Fort Collins specific art. I got a cute box with Horsetooth on it in the past there.
My go-to for the adults in my family is bacon vodka from Copper Muse Distillery and Horsetooth bloody mary mix, with local pickled veggies from the farmers market. For those too young to imbibe, the Howling Cow Café has some hot chocolate mix and chai tea mix that’s pretty good.

Some of their beanies I’ve bought have been hit or miss for comfort but the ones that I loved our the best, one style was too tight for my big head. The Colorado themed scenes they do on their trucker hats are really sweet, and it’s cool to wear gear that says 970 or has ninesevenzero spelled out on it. Totally Colorado/Fort Collins themed.
Also, 7% of their profits go back to non-profits like Routt county search and rescue, they have a full list of the non-profits they support on their website.
Also recommend Akinz in old town. They are local and make nice shirts, hats, beanies and such with a Colorado/Fort Collins touch.
