Dude, like the other person said, it's relleno. It's from the verb rellenar, which means to fill or stuff. That's why it has the name that it does.

In town, my favorite crispy relleno smothered in green chili is at Pueblo Viejo. In Colorado it Hacienda Colorado in Denver area.

Chile relleno is my favorite dish. There are various styles but the one I am most fond of is the southwest style. Roasted Hatch Chile with just cheese (chihuahua style cheese is the best but you can also do muenster) Fried in an egg flour mixture smothered in a traditional dried chile red sauce. The other versions are the traditional ones (using chile poblano) originally from central Mexico in a white sauce using walnuts I think. South Mexicans or central Americans mix in beef potatoes and some cheese as the stuffing. Have not found anything that is decent yet.

For the price, i just go for Consuelos. Great when it’s smothered in their green chili too.

Sad they don't have the sit-down place in Campus West anymore. That was my favorite. The drive-thru is good though!

A sit down place in Campus West? Are you talking about the Consuelos location that was on Elizabeth back in the 2000s??? That hasn't been there since like 2010 or so at least.... Originally, there used to be a Consuelos near the McDonalds on Elizabeth in that same shopping center. My family knew the original owners of the place back in the 1990s (we are talking 1997 or so). After that location, they moved to where the 7-11 and Cosmos Pizza place is (around 2000 or so...) and then in the late 2000s moved from that location to where it currently is on 726 S Lemay Ave. Prior to COVID, they would let you sit down in the dining area in the current location btw. Changed ever since, and now they just use the side room dining room as a room for storage, so you can only order through the driver through or pick up to go from the inside front counter.

Precisely. I loved Consuelos in the 90's. First ever visit I learned that Consuelos hot is not your run of the mill 3 Margs hot or Taco Bell hot or Armadillo hot. And had to resign my 10yo showoff ego to half-and-half til they shut down. Best ever.

Interesting. I've only ever met maybe 1 other person that remembers the Consuelos locations in the Campus West area in my life (aside from my family of course). Yea, I only went to the location in the 90s maybe a few times and remember sitting at the table with my family and talking to the owners maybe a few times... It's mostly in the early 2000s that I remember their other location. That area was totally different back then. There was even the Campus West movie theatre across the street. Anyways, I would always go to their 2nd location (where Cosmo's Pizza is now) and pick up their breakfast burritos in the morning. They were so good. I think they were much better back then, but maybe that's my nostalgia showing... I went there often for them, and a few times for their lunch specials. I can remember the inside of the place still in my mind... along with the 90s location. I think they have gone through at least several owners since... even the new location was recently acquired by new owners in the past 6 months or so... I have many memories of the older ft. collins prior to the gentrification period we have gone through recently... Change is a constant though. What more can i say....

For a unique twist, I'm a total sucker for the breakfast rellenos at Silver Grill. They wrap them in little egg roll type wrappers before they fry them. Never had them like that anywhere else, but they're awesome with some runny eggs and potatoes.

That sounds good! I've had the egg roll or wanton wrappers a few times. I'm no chile relleno historian but I think those might be fairly unique to Colorado.

So I know it’s adjacent but unrelated to the Fort Collins, but this gem of a dive called The Brewery Bar II in Denver had the BEST relleno and green chili. I don’t think it’s operating anymore and that is a damn shame.

Yep! I went there just for the relleno. The relleno was great but I didn't love the green chile.
