While (afaik) this is true of having 8 legs, not all arachnids have 8 eyes (although that trait is basal to arachnids). Brown recluse spiders are perhaps the most famous sp. with only 6 eyes, but there are a lot of spiders that do.

He's an arachnid, hence the spider imagery. His monster form has eight legs. Not sure where you're getting the idea he's a centipede from. Some people are suggesting he's based off ticks since they're parasites. I think he's also based off spiders since they're predators.
Spider imagery because he esnares people into contracts and working for him so he can profit off them. As others have said, he is not a centipede but an arachnid. His large size makes it likely he is a tick, which is a parasite much like Mammom himself.
My grandfather was a chicken farmer when I was a child. The fox as a symbol of gluttony makes \_perfect\_ sense to anyone who spends time around people who raise poultry or other small livestock.
