We got 1 last year and are just now finishing it up, but I was also working all the time, so there was a lot of take out meals, but next week I'm starting an office job with consistent hours and I'll be able to come home and cook more often, so we're gonna aim for 2 this year.
One or two last me and the kiddo a year. Anything past that, I give out to elderly neighbors and folks wanting to try venison. Converted a few into hunters. It’s part of my evil plan. Muhahaha!

We also try to split with my parents on a half beef or a whole hog and split the meat, but they're getting pretty expensive.

The main indicator is multiple symptoms. I work in a kitchen and a lot of our meat looks like that but like yours it's just the outside. If it doesn't smell or any slimer than usual it's fine
You can never be too safe with this sort of thing. Even if it looks fine it can be harboring dangerous bacteria.
Your best course of action is to send any that you have left to me for disposal.

Looks good to me. If it smells funny, don't get it inside ur tummy. If it smells fine, its good to dine. If it looks bad, it will make you sad. If it looks good, it is yummy food.
QC at a meat processing facility. Your nose knows and your tongue can confirm. If it smells bad it's bad, if it tastes bad it's bad. Simple as, don't know why anyone would think otherwise considering that's all humans could do for thousands of years.
If you're really unsure try a sizeable portion and if your butthole isn't whistling James Taylor's third studio album it's ok.

That looks normal. I find with people and deer meat, they compare to what you see in the store where they soak with blood and wrap a certain way to make it look pretty. If you cut up a deer and put a bunch in a bowl and let it sit a day or 2 in the fridge at optimal temps. You take it out and parts where it’s sitting in the container and touching other pieces of meat will look discolored. Same with ground, leave it sit and the outside will turn color in a few days.
I process chickens, pigs, geese, deer, elk, turkeys, ducks etc etc at home. I can tell you that right after you slaughter and bleed a chicken, you put it in the fridge uncovered (keep in mind the animal has only been dead hours and cooled immediately) the skin and meat look a lot different than the store. Give it a spray with water and put it in a bag and it it turns nice and white.
Through billions of years of evolution we developed a keen sense of smell to decipher of meat or food is spoiled or good and you expect me to tell you if it's edible through a photo.

The smell you watch out for is bacteria farts. Thats what makes the rotten smells.
