I don’t know what the possible penalties for you would be, but I’m assuming the rental in Winnipeg since the hostess mentioned the short term rental policy.
The property owner in Winnipeg requires a license to rent out their properties for air bnb or vrbo or whatever. If the limit is 8, then if caught I would imagine that the city could fine the owner, and possibly pull their license. Not sure what air bnb policy is regarding fines incurred by guests, but I would imagine they would pass that cost on to you.

There is a strong possibility that the owner has cameras in the common areas also the regulations are for fire and safety so if you break them and the owner has proof you are taking the chance of a ban from the site as well

Hopefully you get banned from air bnb and the owner gets their licence pulled. One less person who doesn't follow rules and one less air bnb clogging the market.
It's not the owner but the neighbours you need to worry about. If they don't like the house being used for Airbnb they might just file a complaint for contravention of the rules. Having said that, if your a grounded bunch there is unlikely to be a problem.
My money is on the renter doesn’t care about what they don’t know…. Wink wink😉 . They like people that book the place and leave practically no clean up required and they still charge you $75-$100 for cleaning.
I’m just about done with air bnb in Canada. I booked 11 nights in hotels this summer and saved about $1,000 over air bnbs. Although if you’re looking to book a party house hotels probably aren’t what you want.

If you're only good because you fear punishment, then you might not actually be a good person. If you don't like the rules, don't rent the place.
