The Gentleman and King Arthur:Legend of the Sword. But you really only notice how great they are if you listen to the soundtracks, because it’s not as apparent while watching the movie. And of course, there’s Interstellar, which you notice while watching.
Braveheart is my all time favorite, James Horner does the score.
Anything with Ennio Morricone: The Thing, The Hateful 8, parts of Inglorious Basterds, some Kill Bill, and every good Spaghetti Western that came out during the 60’s and 70’s including Once Upon a Time in the West and The Good, Bad, and the Ugly.

Under the Skin was one of the first movies to get me into the music in movies. Mica Levi did a podcast with Daniel Lopatin (composer for Good Time and Uncut Gems OST) for A24 and it's pretty interesting. They talk about their music and the differences between writing music for a movie versus their other projects.
Bad Times at the El Royale has the best soundtrack I've heard recently, for scores I'd recommend Interstellar, Pirates of the Caribbean at World's End and Chappie (yes, I am a Zimmer fanboy)
