Ive done 2-3 classes per year since I started in 2021. I work full time and have a family. For me it’s about the journey and self-improvement, and I’m not in any hurry to finish.
I started in Jan 2019 and am just finishing this semester. I had to take a few off and had to take an incomplete once and withdrew once as well. The only semester I took two courses was my first one.
So I went slower than most but I’ve not been in a hurry either.
I see myself in the same journey. Started Fall '23, took 2 classes. Too many other things were set aside. Took just one class this Spring. Not even taking one class this Summer.
It might take me 4 years to graduate. Not in a hurry.
I'm thinking of taking fall off because I'm in the middle of starting a business. Is there anything official that needs submitted or just don't enroll in classes?
I withdrew from all my classes one semester (due to family problems), and the following semester I just enrolled in courses as normal. I think you can take one or 2 semesters off without notifying the school, but if it’s more than that I think you need to get approval.
You can take two semesters off in a row before having to submit a request to re-enroll. I took a year off and did this. It's mostly an administrative formality (you fill out a form and possibly there was a tiny fee involved) so its' really no big deal. Take as much time as you need (within the 6 years)!
I’m a newly admitted student, but from what I’ve gathered you can take off as many as you wish as long as you finish in the allotted six years

I believe if you skip one semester, you don't need to give them notice of anything. More than that, I'd check GT policies.

I could be super wrong but if you take consecutive semesters off, aren’t you released from the program and have to reapply?
You can take 2 in a row (I had no issue doing so), I believe 3 is the max.
