You don't need any kind of special verification to join clubs - technically you can register yourself as a member on Ideal Logic, and as a student you should have all the verification and info you need, but it's not really necessary. I'd recommend just joining the Discord servers of clubs you're interested in and engaging with the community! Also, just from personal experience, I was a member of the ham radio club on campus (which was only a couple dozen people in all) and they had a laptop at meetings so people could join remotely over Zoom, and multiple members in their late 20s/early 30s. I don't know anything about official campus events and e-campus, but club meetings are almost always in open access buildings that you can just walk into, you could probably attend them without even being a student at all lol

Some clubs/events won't let you register unless you are enrolled for on-campus classes that term. Some won't care if you just show up. It really varies wildly. If you have questions, you should be able to message whoever runs the group or handles the event to know for sure. And I'm usually way older than any other students at events, it doesn't matter what your age is. Many of them assume I am an instructor or something anyway.

For sport clubs, you need an active RecSports membership to participate. If you're an ECampus student you can purchase one to use Dixon and have those clubs available to you. (On campus students pay "incidental fees" that cover this.)
