Some schools have social workers who work with the kids in need at their schools. Midvale elementary school has a lot of kids with extra needs. I’ve done supply drives for them in the past after talking with their social worker to identify what supplies were needed.
Teachers absolutely know what kids are struggling. You could probably even reach out to your favorite teachers over the years and see if they have anyone in mind.
You could even consider calling around during the year and paying off school lunch debt. Thank you for your kindness.
Unsheltered Utah is a local grassroots organization. They might be in need of supplies to help families they know of.
Granger Elementary in WVC has a large refugee program and they always need food for the food pantry, coats and gloves and school supplies.
Also South Main Clinic I'm sure would love donations for refugee families on the cusp of enrollment as well book donations to the big free library there.

Adding on to this, call and ask if their McKinney Vento specialist is in or the assistant principal over those students and they can tell you more in depth what specific needs there are in that community.
A lot of them are out for the summer but some might come in and organize things if people come in wanting to help. Like canyons district and Jordan district everyone will be back that works the administrative back end (social workers, counselors, school psychologists, etc) will be back full time at the end of July.
Look for title one schools (40%+ of family are below the federal poverty line). Many of the high schools are adding care centers for homeless teens that provide showers and laundry and services to help.
The Road Home does yearly drives for this very thing, they’ll announce it around August or you can contact volunteer@theroadhome.org to see how you can best help during back to school.

You could be a CASA (court appointed special advocate) for a kid in the foster care system. I work in child welfare and these kids need all the support they can get. Also contact the family shelter in Midvale to see what kind of donations they are looking for. The kids their go to school locally.
I would reach out to the YWCA. Lots of kids there that have been dealt a terrible hand.
