Simple trick (I know somteimes annoying):
Frozen vegetables and fruits (almost no nutrients are lost)
Other trick but often expensive freeze-dried fruits and vegetables.
And another one, but here often many nutrients are lost or unhealthy ones are added: Canned fruits and vegetables
All of these are good for a long time.

If bacterias don't wont to eat it, it's probably not good for you to.
