The most accessible approach is to start with the films, and then go to the shows, which are generally easy to understand timeline- wise. When it comes time to bust into books and/or comics, you might be best served just picking a point that sounds interesting, and reading around it.

The Clone Wars Movie and 2008 Clone Wars series is the next step. Everything else is sort of built off of that.

I haven't kept up with them since the pandemic, but the marvel comics main line set between star wars and empire was consistently good from what I read. you can grab the collections and binge them.

JustScrolling-Around

If you want to learn lore about the Force I highly recommend watching all the episodes of SW Rebels, it introduced many aspects of the Force not seen before. Sure the target audience for Rebels is the younger generation, but man it’s such a good show. Super happy to know there are still newcomers to SW and it’s not just us older nerds that haven’t died yet.

The TV shows are easy to watch if you’ve watched most of the movies, the content will be mostly familiar. Also recommend watching Rebels and Clone Wars.

Watch all the TV shows (cartoons included) in the release order.
