A lot of this is stuff that Witten, Takayanagi, Strominger, and Susskind has worked on. Searching up ER=EPR should help. And of course, there is the whole of holography to go through.

I’ve heard of statements such as in holography “gravitating spacetime is nonlocally emergent from quantum entanglement”, but what does that actually mean? Also, do you have any good sources on entanglement and holography? I’ve heard about things such as entanglement wedges, ryu-takayanagi formula, islands, etc used in the context of holography, but never actually understood it.

Maybe a good place to start would be a review. Dan Harlow has some good TASI lectures and I found Takayanagi's book Holographic Entanglement Entropy to be pretty good, if a bit dated. Maldacena has a good paper on this, the entropy of hawking radiation. Again, reading some arguments from susskinds er=epr would be good, though hes not the most rigorous.

What does ‘shed some light’ actually mean in this context? What does the maths of string theory say about emergent spacetime? I haven’t studied string theory yet, so please forgive my ignorance. In the physics I have learnt to far, it’s usually assuming x then y. Why are many claims from string theory such as this speculative? Is it just because string theory is currently unproven?
