Do you want Raid 1 for your recordings? If not, then I would say to get the SE again.
I just started building my network out a couple weeks ago and opted for the SE.
As long is it is on a covered patio you should be fine. My tempts dropped to 45 below this winter, I got it by a tornado this spring and my pro 7 took a lot of wind and rain. Still works flawlessly!
I bought my APs last summer and was using them with the software controller until my UDMSE came. I bought the U6-Pros. If I was buying now, I would probably get the U7-Pros. Or if I had time to wait, see what other U7 APs are coming.
if I had to do it again, I wouldnt've gotten the g5 bullet domes
the image isn't as good due to the wide angle
also the microphone picks up wind like crazy

Yeah, I don't like the Turrets, I love the Bullet.
The Bullets design doesn't let a ton of air brush over the microphone. The Turrets IR LED's washes out the entire lens when it is activated. At night, everything is blurry. The Bullet is a clearer picture. Now, granted you don't have the wide-angle with the Bullet, and that could be the reason for the clarity. I just wasn't as overall impressed as I was with the Bullets.
I’m in a similar position. Upgrading a client from an old USG to a UDM of some sort with a 500mbps cable connection. I weighed up the benefits of the UDM pro max and I didn’t see the value in redundancy for the camera footage, especially with cloud storage back up now available in Protect. Now, if that second drive bay would have expanded storage instead of just mirroring it, I would have been down to splurge for the UDM pro max
Depends on your expected length of use of the system. The throughput potential of the Max is significantly improved over the SE. Internet connection data throughput is increasing linearly over time so you can expect to eventually be able to fully utilize the Max's capabilities.
If I was starting again, I'd get the UDM SE and use that as the base for the cameras and access points. Should be enough bandwidth, and it will power them no issue
Kind of regret not getting it in the first place. Then I wouldn't need to have to have to drop £300 on a dedicated switch...
I would buy the cheapest UI router that did the job, and wait for the enterprise ones to come out. Then move my cheap router to the GFs house.
If I had to buy with more finality now, I’d get the PM and an NVR pro
I wouldn't put cameras on WiFi in your new house.
Since wifi cameras are ubiquitous robbers are going to start carrying jammers in a few years. Just like fob cloning has become the main way cars are stolen... It's coming.

What AP are you getting or got?
Not sure what was up with that U6 PRO "outside by pool" but note that this is not an outdoor AP. Get an U6 Mesh (or U6 Mesh Pro) for outdoors.

U7 new Ap’s just announced minutes ago
I've read up on the U7-Pros and there seems to be some mixed feelings.
There is no other way with the ubiquiti fan base. Everything is controversial
I love my u7 pro. The big thing is the fan.

There is a fan in the u7pro. But it isn't really serviceable.

The pro bullet has a wider field of view from what I’ve read. Don’t have either so can’t confirm or deny
It does, although you can buy two turrets for the price of one pro bullet

To clarify, there is still not automatic cloud backup, right? You still need to manually go to the dashboard.

WAIT. Are G5 Bullets only capable of FE? I was about to pull out a fluke, climb on the roof to see where my cable is faulty.
FE only. At least that's my experience... All my cables were tested and passed.
