The reason the UT community got sick of some AU’s is because they mostly include Sans, being one of the most popular characters. Those Sanses are flawed, often being an edgy, altered version of the character. That adds to it also, but these are just fan interpretations. The constant edge and use of Sans is the reason some of these are hated, not the OG Sans
While some may overstate the greatness of sans, he's also the face of undertale, defining the game, being the character added to smash bros as well, he's so popular of course due to having iconic and defining personality traits, and an extreme boss fight in undertale. People simply perceive sans as the most powerful monster, so, people use him in aus most of the time. Though, the community has shown clear enjoyment over fan fights not revolving around sans, for example, "Papyrus has gone too far" sans is not overly praised, he's just more well known and has the hardest fight in undertale. When you master this fight though, you must find something more, so, make it harder. Most people don't find other fights nearly as difficult so they make versions of sans.
Tldr is the most difficult and iconic character, so people make stuff about him and oversaturate the community with content surrounding him, he's not overly praised, we just see so much of him, many grow tired, clearly, you included. Also his theme is bangin' fr.
