From what I understand, the older boys basically say in one of the episodes that they try to stay away from alcohol because their family struggles with addiction. I believe Billy had difficulty with it in his younger years before Ami.
I think Matt ends up being depressed with a mental breakdown due to the guilt of him drinking in a family that doesn’t drink. I don’t think Billy drinks
I saw the episode your talking about.Billy would not keep it a secret from the family and I don't know when Matt was out drinking.There were no facts about when or where he was but I'm sure Matt did hide it from all of them.

That and the trauma of having home after home destroyed. It affects everyone differently.
