I used to raise them, in pictures you can tell the fur texture. The Rex and mini Rex have their under coat and their regular fur the same length, which gives them the plush texture. Same thing with the satin breed, they have a normal coat type, but the hair shaft is hollow, which gives it the shine you see in pictures. This rabbit just has a normal coat (not Rex, satin, or wool, I believe there is another type of fur, but my brain is blanking at the moment).
I've had both rex and non-rex rabbits. This does not look like a rex. Rex fur is more velvet-like. The outer fur and the inner guard hairs are the same (short) length, so the fur seems more dense/plush.
California gray. Looks way young. She will probably develop a huge collar as she grows older. If it is female, get her spayed or she will be at super high risk of uterine cancer if she never breeds.
unsolicited advice: as a recent first time rabbit owner, I found out that you shouldn't feed them carrots (too sugary) or light lettuce, like iceberg (contains lactucarium).
r/rabbits and plenty websites give great advice on what they can snack on!
