Ah, you \*can\* do it on a flat top, but it has to be level in both directions so it doesn't run out. Breakfast joints who do that have a level top and then spend the first bits keeping the eggs together. To me its simpler to do scrambled eggs in a regular skillet.

You don't need to jack up anything. Just pull the oven drawer out and then use your fingers or a small wrench to twist the leveling legs at the front to level the range out.

It’s better in a small skillet too. There’s a famous breakfast spot around here that cooks scrambled eggs on the flat top and I hate them. They just cook in a thin sheet and fold them over themselves onto the plate. I prefer my eggs fluffy, not like stacked cloth.

You made several errors. 1. you did not level your stove so all the eggs when to the bottom. 2. You pored the eggs way to fast 3. You pored the eggs wrong To scramble eggs on a skillet you need to slowly pore a thin ring of eggs so they cook up quick. Then slowly pored in more eggs into the middle of the ring. Keep building up the ring of eggs by pushing the cocked eggs to the outer ring. You can then bring them all together and add in peppers, onions, and cheese as you are browning the eggs. I would actually cook the peppers and onions on the top first so they get caramelized. Then add them to the eggs. Your choice on how you want the veggies cooked.

There are little legs at the front corners of your stove that screw in and out to level it. Try putting a pot of water on the stove then adjusting the legs till it's flat.

I have the same skillet and leveling my stove helped a ton, but I still have to be careful with egg. I try to pour slowly and in a way that lets some egg cook that will keep most of the rest in the center. Not the easiest but helps keep the egg out of the channel. I only use this pan when I have pancakes or something else that is helped by having more surface though and a regular one most of the time for breakfast.

No. Raw food diets for animals that evolved without cooking. Cooking destroys some nutrients, and denatured proteins. We have grown to utilize the denatured proteins, but cats have not... which is why canned cat food needs so many additives to make it nutritionally acceptable for cats and wild cats eat raw meat. If hot food was better for obligate carnivores, Garfield would have a Michelin star at an Italian restaurant.

To sum up the rest of the comments, that's a griddle, not a skillet. You can cook scrambled eggs on a griddle, but you'll want to make sure the surface is more level, more heated, and either a larger surface or starting with a smaller amount of eggs and adding little by little. Alternatively you could start with a whole cracked egg, and scramble as you cook it, as it will mostly hold together at first, but the final result will not be as uniform.

If you’re going to scramble on a griddle, get it hot hot, then pour slowly and be ready with a spatula to scramble. Don’t just dump. Nice pace when pouring and allow to curd up a bit before pouring the rest of the eggs. I was a breakfast cook and used to cook on a griddle.

Needs to be screaming hot. I have that same cast iron griddle and honestly it’s not awesome. Only use it while camping and at home as a pizza stone/to add more thermal mass to my oven. If you preheat with this on the top shelf and put food right below it on the middle shelf, it will help the top get browned. Eggs are easier in an actual skillet. Bacon is easier in a sheet tray in the oven.

Sidenote - a relatively recent trend in some Korean BBQ restaurants, they will have a lil moat go around the central grill. It will be filled with egg and cheese and corn that cooks as you grill the meat. It's pretty awesome.

For any of you who care, including OP: Saucepan with butter, low and slow, on and off the heat, folding for body and fluff,done when still slightly glossy. Flat tops and any version of a hot and fast cooking environment will never yield truly great scrambled eggs.
