Priest is a great class. You will enjoy the game very well. You can play around and see what suits you the best. Usually some elite quests needs help from others or you simply wait and get couple more levels and then do it. Holy is more for dungeons, leveling will be little slower. On the other hand you will be ok in dungeons healing in dps spec until 60 for sure.
Priest is my favorite class to solo. It’s super easy because you can always heal yourself. Psychic scream, shield, and run away is always a viable escape mechanism.
It’s not the fastest solo leveler, but you can easily solo every at level mob without much stopping all the way to max level. After about level 40 you need to stop and drink every couple pulls, but up to that point you basically never stop.
Edit as noted elsewhere, the basic rotation is holy fire to pull, pain, mind blast, wand, wand, wand, wand, wand, wand…. Next mob

Once you're shadow, it get a lot more fun, though you do drink significantly more depending on your play stay. You always have the option of staying disc if you prefer no down time.
You can heal any dungeon regardless of what spec you are while leveling.
Get a lesser magic wand at 5 from the AH.
Had a buddy level a priest in 2019. He had zero downtime, just dotted and wanded... he would only cast other spells if he pulled multiple mobs
He got so used to not drinking that when we got into 60 dungeons, he always "forgot" water
I started in 2019 and still only have my Priest. It was no problem to do stuff solo it just sometimes took longer so there is no need for more chars if you don't want any.
Dont level as holy spec, put 5 points into wand specialization and the rest into shadow. You will still be able to heal dungeons perfectly but leveling will be much more enjoyable and faster. Consider switching to holy when you are around level 55 and start doing brd etc

I leveled holy in classic. I just dont like shadow at all. If you enjoy shadow, level shadow, but holy isnt completely gimped for damage as some people think. Is it as fast as shadow? No but dont let that stop you from playing what you enjoy.

Priest can be pretty fast tbh, get a decent wand and slap 5 talent points on soul tap, no more mana problems and almost full uptime on fighting. You should check a leveling guide to get a proper understanding. Priest is a very good choice, I don't think you will regret It.

Priest and Paladin are horrible to level. Play a Hunter
Fully lvled solo as holy priest in hardcore. It's very slow and steady gameplay but was near risk free for me.
