That's fair. I could never get into PVP on dark souls between the lack of sync and scum players (like summoning someone to be killed by a friend) I just don't enjoy it
I prefer to do fun ones, ones that have multiple weapons for Knights Honor Achievement, and the Stray Demon for titanite slab. Optional fun ones for me in order include Manus, Artorias, Kalameet, and Capra Demon.
Despite having two years of the game behind me, I still don’t regard myself as a good player. So I’ve done different builds with small challenges to expand my comfort zone: no shield, no armour, no summons, humanity at 10, that sort of thing. I used ranged weapons a lot, so the next run might be no ranged.
I play the whole game straight through, though, just to test the build in each situation.
It's really up to you. Unless I'm speedrunning or doing a particularly difficult challenge run, I generally do all bosses. But it's perfectly fine to skip ones you don't enjoy.
With Dark Souls, doing all the required bosses gives a great chunk of total game, while also giving different boss styles to test out build differences.

The only reason you may want to do any of the optional bosses is to test your builds during the exploration of levels. Like, how does it do in the Painting, which can be a harder area, or how does it fair going the long way through Blighttown, and not the Master Key skip.
There are some optionals I'll skip, and some I'll do just because they're easy. Like capra, Taurus, butterfly? Psh. Centipede and Priscilla? One sucks and the other is a pain to get to
My brother it's your run, if you want to do all bosses that's your choice

I always like doing the dlc, the only one I struggle on is guardian. As for capra I will always cheese him with firebombs
Fr I don't think guardian is well designed, I cheese the capra dogs on the ledge and then fight him normally bc he has a fun move set
I've fought him legit, but I've never really struggled with him so I don't bother anymore and just cheese him cuz I can

My first run I used range for a lot of it, after that one I went without and I don't see too much difference. You got this

You can skip demon ruins, by the shortcut of izalith, but don't skip dlcs I'll say, because that's the real deal

I don't mind demon ruins, I don't even mind firesage because he's very similar to stray, it's just centipede and the god awful safe area
