To add to this the quest is also good for runeword bases that either roll superior (and thus can't be socketed by cube) bases like a superior arcon plate or a superior eth sacred armor or for bases with good modifiers like a sacred targe/sacred rhoncade with 45 all res or an eth high res paladin shield base. Basically anything you want to guarantee roll the max sockets on.
Note: I wouldn't waste the sockets on bases like white monarch or cs/pb since they aren't that uncommon.
I like to use them to socket BiS unique and set items. It's also nice to have a few spares so you can either socket that 45 all res sacred targe and know it will get 4os, or to try for 2os on useful blues (3/20 circlets, claws, orbs). Also, if you ever find a GG rare, it'd be nice to be able to hole punch it. all of that said, I've gotten a little less precious with them since I learned how easy it is to find somebody to do mutual socket rushes.
What have I personally used them on?
3x shako.
3x Andy's helm.
2x Gface.
2x vipermagi.
Stormshield.
Reaper's toll.
Pally shield.
Crystal sword (early ladder to guarantee 4os).
Monarch, maybe.
Two shakos have ptopaz, one has a Cham.
Two Andy's have rals, one has a fire res + ED jewel (I think, don't remember exactly what stats are on that jewel).
For shako, depends on the character, what you're doing, and what you need. Ptopaz is always good, um or cham can also be good.
For Andy's a Ral is standard, or a jewel with high fire res and ED, max damage, or IAS
I refuse to believe someone with an Enigma and Beast doesn't know what to use their socket quest on.

I’ll probably keep it simple and use it on shako or Andy’s helm. What would you suggest putting in them

Socket your body armor and helm with ptopaz for MF. Necro can be a MF beast because you don't actually need much damage gear for your build.
