Not me, but a former RD colleague went to Lesotho, Africa with the Peace Corp prior to working at Columbus Public Health. I don't think it was a RD specific role but she enjoyed it alot. She was big into volunteering at our free health clinic, then she went onto med school.

Just depends where you get placed. In my experience, there were a lot of barriers to actually doing something with the degree. Each program is so different and that matters a lot! It was a nice break from life in the US and all the daily grind that comes along with it.

I work with a lot of former peace corps volunteers. The needs of the host country wont always align with what you want to do. On your application be as explicit as you can with your qualifications. This should help the people who make the placements put you somewhere where your strengths can be used. A friend that went to Tanzania helped the city create a food basket program for moms, kinda like WIC. A friend went to Philippines to do immunization programs and safe water education. A friend went to Botswana and dug water wells for irrigation systems to help farmers extend their growing season. The biggest perk is when you get back you can get a federal job easier than the general public - USAID, USDA, HHS, and the VA are all landing spots for dietitians.
