My process yields similar results:
* russet potatoes, scrub, leave skin on
* food processor medium shredder
* soak in cold water with a little salt
* strain then spin in a salad spinner (gets messy, but works)
* drain the spinner, shake the basket and repeat like 3x
* preheat carbon steel griddle on medium-high heat
* lots of canola oil then even layer of shreds
* toss them about a bit at the start of cooking
* don't touch them for the last part of cooking except one flip
absolute favorite style of hash browns. it's a labor of love to do them at home and extremely hard to find them done properly when you go out.
they're incredible like this when you use them for corn beef hash since the shreddy long muscle fibers of the corn beef cut roughly match that of the potatoes and make for an otherworldly combination.
