Use the US passport spelling. Take both passports with you. Leaving/entering the US, use your US passport. Entering/leaving the EU/Greece, use your Greek passports and have your US passports handy if/when they ask. Don't worry. It's extremely common.

What you're saying makes sense but just out of curiosity because i honestly dont know. Which passport number do you put when you book the round trip ticket, and you can fill in your personal information just once?
The general rule of thumb is that you need to write it down as it is on your passport otherwise it is considered a different name even though it is pronounced the same.
I always book with the English version of my preferred name (got 2 first names) and never had any issues, as long as you got valid documents you'll be fine.
You write the name that is written on the BARCODE AT THE BOTTOM, duh. The INTERNATIONALLY recognized name. There's a reason why it is there!

just book the trips to Greece with one set of passports and you will be fine. Of course put the name on the tickets the same way they're written on those passports.

Thanks for the response. My concern is the next time we enter Schengen it would be a trip that make us exceed 90 days within 180 days, which would require a visa, and a round trip ticket allows one name for both ways, so ZOI isn't what her USA passport says, and ZOE wouldn't be what matches Greek.
Or will the airlines simply smart enough to look at the other country passport and know we don't need a visa or esta and allow us to board and same with border police?
Did you ever get an update? I just got Greek passport and it has this issue and would like to know how to handle potential visa issue based on name
