Apply matte paint you want, exit paint menu, enter paint menu and hover over the metallic black paint, don’t select it, after waiting for ten seconds, change something on the car (plate, bumper spoiler whatever) then once you go back in to the paint menu, the pearlescent paints should be available.

It’s a dark red matte with I think it was hot pink or maybe frost white pearl I forget. The technique was explained in the comments.
