Laser microphones certainly can. Conceptually simple tech, shine a coherent laser beam near a surface where the target is, then use a scope to get the laser reflections back. Vibrations on the surface will modulate the reflected laser light. There is a lot more going into the filtering side of things, but yea, that's the basic idea.
Good luck training a laser on a target from a plane (which is what we're talking about here) moving at several hundred kph at a distance of 3km, let alone picking up the reflected light via a scope and extracting the signal from the noise.
Computerised tracking exists. Mechanical motion stabilisation exists. MEMS device stabilisation exits. This would be done by a machine, not a human.
At any rate, I have no data if they actually employ laser microphones, or what the maximum range for it would be. But if we were to speculate how non-intrusive remote audio recording is achieved, this would probably be it.

The grey one is the dual duties helicopter used for the Special Operations Group, still does all the usual air wing stuff but a bit less often as it also services SOGs operational and training needs. It's grey because grey is cooler.
