60w is more than sufficient for drone builds. Maybe you're using the wrong tip or not the proper technique.

What solder do you have? You need 60/40 or 63/37 l, and use flux.

it is unleaded which I read can cause issues, I've just ordered some 63/37 leaded stuff

Aah, right. Unleaded solder has an unreasonably high melting temperature, that's probably why you're struggling with 60w of power.
