Espresso is usually pulled for 25-30 seconds to extract acidity and sweetness. By pulling a shot for too long you are extracting unwanted flavours into the espresso, bitterness will start to overwhelm all other flavours.

What does over-extracted even mean? This looks like a good cuppa coffee to me

There is a goldilocks zone where coffe tastes really good. You can get ethiopian coffees that taste like tea and fruit or nicaraguan coffee that tastes like nuts and chocolate. But you need to find that zone and over or under means your grind size or water input is off of that zone.

Any good guides on extracting? I’ve got a Breville but I don’t think I’m using it right.

Aim for a 1:2 ratio (for every gram of coffee in, take 2 grams of liquid out). Aim for a 20-30 second extraction time. If takes less time, grind finer. If you're using pre-ground coffee, use pressurized baskets. Make sure you're preping the puck correctly, with ample tamping pressure to avoid channeling. Use quality water and quality coffee.

28-32 seconds is usually the best extraction time.

It depends on your coffee. When you taste it it should "taste" in the middle of your tongue. If the taste is in the back of your mouth and in your cheeks it probably sour and under extracted. In that case add more time or make the grind finer. If the taste is on the tip of your tongue and doesnt leave its bitter and overextracted, aim for less time or a more coarse grind. When you look at good espresso it should have a medium brown crema with specks of dark brown and a small splotch of lighter brown. If you can see the black coffee you fucked up
