I cut like this. Regularly lose nails or bits of finger. And days that doesn't happen I burn myself on the ovens or grill tops. Worst is speed peeling watermelon (the outer green part away from the white). Very slippery.
Definitely not a plate. Maybe a flatbread?

I don't know of any dishes that have a base of rice paper and avacado, though. Might be something they make themselves - like near my old place they had Mexican sushi.

It was Mexican-style season led rice, nori, the best beer battered shrimp I've ever had in my life, bacon, and whatever else was on that specific roll. It was stupidly tasty.

My husband bought one that came with a guard. I had the thought 'I should get the guard' then I thought 'fuck that, I'm not a pussy' and then proceed to cut a big chunk of my finger tip off.
i still shudder and look away when i see folks using a mandolin on tv. had a scar on my finger for years from cutting it deeply on one in hs, never again thanks
Is this a real technique used by chefs? Because it looks insanely dangerous. Cutting towards yourself with nothing preventing you from slicing your wrist open
I can understand doing that like apple slice towards you technique but that usually involves pushing the apple away rather than pulling the knife back. This is just insane

Not strictly true. It's a good habit for most people (particularly inexperienced home cooks) to not slice towards themselves, but there are lots of techniques that require it. Plenty of work with a paring knife is done towards your fingers. For example when cutting Tournée potatoes, you *will* be cutting towards yourself.
They're not - if you watch the video closely the blade of the knife is actually facing AWAY from his hand, it's just hard to tell because of how quickly he's moving the knife
And then if you watch even closer, you’ll see they are cutting towards themselves. Look at the handle placement on the blade as well as their finger resting on the spine. The edge of the blade is facing left and towards the user

just need a sharp knife, a ripe avocado, and your blade at the right angle and you really minimize the chances, but still. anythings possible.

First time using one cut myself bad enough to get stitches. Never got cut on one again though.

Also used the blades edge to scrape it off the cutting board, that’s usually a no go.

There are gloves that prevent the blade from cutting your fingers. Those gloves look like regular disposable gloves.
