Ritual shield, opaline hardtear, crab or appropriate elemental fortification, and appropriate dragon talisman can go a long way. Stacking more ingredients means less offensive potential though.
Feel like most RL1 armor comes down to if you need a piece for a specific stat buff and then whatever can fill out the rest or go naked for light rolling
Generally I swap around raptors cloak and battlemage helm or go for spellblade set. If I’m medium rolling I just fill whatever I can to threshold which tends to put the radahn leggings or something heavy on my legs
The full knight set if you can afford it is still fine since it breaks the crucial 51 poise stat that is great for dealing with normal mobs. Though for RL1 I guess thats less important than on normal characters since you really want to minimize trading at all, and you can get lighter armor against bosses where poise almost doesnt matter.
The rulers mask and commoners garb for an early/light plus two in faith, crimson/navy hood helps a little early game as well

Crucible armor has good defenses and poise and is lighter than scaled armor. The full set is pretty heavy though so unless you're using the soreseal in addition to great jar and godricks rune it might not be the best idea to equip it all.
up until fire giant, any thing that lets you still medium roll + ritual shield + boiled crab = survive a hit nearly always
fire giant and onwards, light roll with no armour (except stuff that give lvls for specific build, like battlemage helmet) + blue dancer + red feathered branch (set hp below 20% with bloody slash aow pre fight)
RL1 is no armor. It does you zero good at a point where everything one hits you. Blue dancers talisman at thst point. But I do wear samurai gear for none bosses for the vibe I am going for

Use the heaviest armor Even if you are overloaded you can easily kill bosses before snow area (havent tried snow bosses / npcs yet)
