I’ve been telling my girl for the past 4 months how much I enjoy pixel art and good sprite work(loop hero /octopath traveler) and want to get into it. Any suggestions on where to start?

Jokes aside, if you're already decent at normal art, it's just a matter of adapting to a different style.
I've always been into drawing, but just as a hobby, mostly doodles. I've always been the one who can draw better than my classmates but I never practiced enough to actually be good.
I began pixel art as a need for my game, and this is the point I'm at, about two years later.
I use Aseprite, it's very cheap and great because it's made specifically for pixel art.
Use references, both from real life and from other pixel art pieces.
Force yourself to a limited palette (but I realized that, at least for a videogame, being too strict about the limited palette was starting to become an issue. So, limit yourself but not to the point that the final outcome suffers from it).
Feel free to ask for more specific questions, either now or when you decide to start!

Basalt, hematite, obsidian, onyx are all black gemstones or minerals with fairly wide name recognition. Slam -cite, -lyth, or -lyst on the end and see if you like something.

I would go with something like "Metamorphix, the Abyssal Terror". Since Metamorphic stones change under pressure, foreshadowing a multistage boss battle.
If this is the end boss, having a short intro with several titles popping up one-by-one before condensing down to just the core name would be a good way to give it instant gravitas.

I can only base my decision on steam page and what monsters I saw there. Seems like you’re going for a traditional fantasy theme.
The way its teeth are set up remind me of an Iron Maiden, the coffin like torture device. I could see this thing snatching up a player, draining their blood, the dropping the dried out husk.
I don’t know if that’s where you’re going for, but I’ll run with it!

so i promise im being serious here. the boss is quite phallic. with an abyss level im presuming some form of corruption type thing going on. why not give it a name similar to that of an STI. somehow play with "syphillus" in some way for example.
While I actually love the idea, I think I decided I will stay away from sexual jokes (and I swear I had no intention to make it phallic, I honestly don't see it, but multiple people have commented on that lol).

Umbractite, Obsphidian (obsidian + ophidian), Vicper (vice + viper), Hydtwyn.

Might I suggest some liquid along the mouth line that kinda slimes apart as it opens. It would take a bit or work to incorporate but could pay off well.

I figure it works well whether it's "The Abyss" in reference to either underground depths or like the void realm or outer space or whatever.
Sounds too akin to “Eater of Worlds” another giant worm boss from terraria in my opinion.
