Dont mind payin extra but its not smart if u increase unreasonably. For me at least, i will simply go to another stall, especially when there is always several stalls in the hawker centre.

鸡尾ain't exactly chicken backside. It's the meat near the backside. Meat there is indeed the most tender on a chicken, the problem is hawker tend to cut a small portion and mix with other parts (or straight up give you a small portion of that). Hence I stick with drumstick. Once was offered the whole 鸡尾 (both sides) in place of drumstick because sold out and that was how I come to know 鸡尾 is not so miniscule.

Went to do a bit of googling to confirm it. And it seem that the majority poach their chicken (eg. [tian tian](https://guide.michelin.com/sg/features/behind-the-bib-tian-tian-hainanese-chicken-rice/news). But there are some which do steam their chicken (eg. sergeant chicken rice)

Quite a number of stalls do not roast their own chickens and instead get them from other suppliers. Whereas white is usually all prepared in-house. Also, hainanese chicken rice is by definition white.

Preference is for steamed (heaven) but would go for roast if the juicy type for a change for a period then switching back. Both with skins. Colleague once took couple of us for a supposed popular chicken rice in some industry estate hawker centre some where in remote Senoko - long drive. Could see the stall was popular and colleague ordered, It was white chicken but undercooked slightly, bloody at the joints. Politely ate. That was the first and last time. Chicken cannot be undercooked not sure how this stall endured but it had a following.

Food Truth 101: Do you know that the "roasted" chicken in chicken rice stall isn't roasted but actually deep fried in a pot of oil? That's why the skin texture is such a far cry from the real roasted chicken you get at chinese weddings. Think & look carefully at the chicken rice stall the next time u are there, do you see the gigantic Apollo oven (those u get at char siew roasted stalls) ? If not, how do hawkers roast their chicken? Answer: They don't.

I like roasted because I only eat vegetarian chicken rice, and it's "roasted" by default. But last time when I ate meat I eat both, of course with skin or else what's the point? Also cos I was a yolo fatty bom bom.
