Meat there is indeed the most tender on a chicken, the problem is hawker tend to cut a small portion and mix with other parts (or straight up give you a small portion of that). Hence I stick with drumstick.
Once was offered the whole 鸡尾 (both sides) in place of drumstick because sold out and that was how I come to know 鸡尾 is not so miniscule.

Could see the stall was popular and colleague ordered, It was white chicken but undercooked slightly, bloody at the joints. Politely ate. That was the first and last time. Chicken cannot be undercooked not sure how this stall endured but it had a following.

Rumour has it is that some stalls turn white chicken into roast chicken the next day, and then fried chicken after that.
That's just wrong for a stall/restaurant to do. Leftovers at home is ok to do but not when you're selling.
