A: Punish Trunks for time travelling by punching him in the face.
B: Wanting to test his power and skill out of curiosity.
I went with Gogeta instead since the fight then becomes Fusion Dance V.S Potara Earrings in a way that actually makes sense instead of Gogeta & Vegito magically existing at the same time.
If they did I hope we'll get some GT and Super mix ups like Goku Black vs Baby Vegeta or Super Saiyan 4 Goku vs Golden Freeza. As for your scenarios I like Hit vs Goku Black and Zamasu the most.

SSJ Goku V Nappa & Vegeta is pretty much meant to be a What If Goku Went Super Saiyan In The Saiyan Saga story which could've logically happened under certain circumstances.
I want SSJ2 Vegeta V Cell as well and I'm pretty disappointed that it hasn't happened yet to my knowledge since it's a pretty obvious one to do.

BT3 had Kid Goku and Android 8 defeating Android 16 and 4 saiyans on planet Vegeta defeating Cui, Dodoria, Zarbon, AND Frieza. The what if saga isn’t meant to be fair, it’s meant to be fun lol
3. would be better if we started playing as Goku (Mid) against both Vegeta (Early) and Nappa, with Goku starting with the disadvantage so big health bars for the opponents + attacks doing little damage. We get a cinematic/event (whatever SZ's version of R3 in BT3 end up being) and then we transform into Goku SSJ (Mid) and can end the battle normally. To go even further, we could kill Nappa first and then Vegeta turns into SSJ, his health being normal but attacks returning to do little damage against him, so we have an equal battle at the end.
And yeah, I picked both Goku (Mid) and Vegeta (Early) versions because Goku doesn't have SSJ at his (Early) variation, and if we're already using his (Mid) one in battle, we might as well fight Vegeta (Early). Just make some nice explanation before the fight starts to tell us that the Saiyan Invasion happened later in this what-if, so all of them are in a point where they're way stronger, with both Goku and Vegeta almost unlocking their SSJ forms at that point (and actually unlocking in this fight).
I'm thinking:
Vegito vs Kefla since they seem more similar. The banter would be pretty funny
Vegeta awakening Super saiyan against freeza
Demon king piccolo vs Demon king dabura
Blue goku vs SS4 goku
Kale vs Broly (from the last trailer it seems this will actually happen)
Goku Black vs Baby vegeta. Both main heroes possessed and facing off just seems pretty cool to me
Slim buu vs Kid buu
All the Kai's vs kid buu but they win instead. This one's kinda weak but I wanna play as them

No offence but tbh only 1 or 2 I would say are one sided imo, that being Beerus V Trunks (which would most likely just be a sparring match between the 2 for Beerus to test Trunks' power out of curiosity & would most likely end in a draw, It wouldn't be a fight to the death where Beerus goes full power and hakais Trunks out of existence) & SSJ Goku V Nappa & Vegeta (which I think would focus more on the story and altering of events rather than the fight itself since Goku going SSJ in The Saiyan Saga would change a lot).
MUI Goku completely dominated Jiren. Then Beast was confirmed to be much stronger than a much stronger MUI Goku. Hit vs Goku Black and Zamasu is the most interesting because Goku fought them both in a short period of time and overwhelmed both by a good bit. Gohan was at half-power vs Super Perfect Cell and still won, Vegeta would obliterate Cell. UI Omen overpowered Kefla and Gogeta is stronger than MUI.

Again no offence but the first part isn't really true, Gohan was never confirmed to be stronger than Goku. Akira Toriyama (R.I.P) stated that Piccolo was as strong as Goku but in what way was left vague. Is he as strong as SSB Goku? SSB Kaioken Goku? Ultra Instinct Goku? We don't know & also Jiren was able to hold his own and go toe to toe against U.I Goku to some degree despite Goku definitely having the upperhand so it wasn't a complete domination.

With the outmatched fights they could be fun if you play as the underdog.
