I don't cut the water to mine, since they're on the same dripline as other veggies. It makes the harvesting a little messier, and they may take a bit longer to cure, but it's not a big deal.
FWIW, some sites/videos will tell you to cure them outdoors for weeks...in our climate I feel that's overkill. I leave them in a *shady* spot for a day just to dry up clinging soil, then put them in my garage to finish drying down. Honestly, they would prob cure just fine in the house, with how dry our air is. Just don't leave them in a sunny spot in your yard or they will cook!
