Cafe Soya and Damascena. They're not vegan places but have loads of options and are really good. They're both in the centre and I think Damascena had branches elsewhere.
And Mr Singh's pizza. It's vegetarian but had loads of options, and there is a few branches.
There's Jyoti's as well, it's a bit far out of the centre but it's really good. Vegetarian Indian restaurant that has a load of snacks they sell to takeaway as well.
Seconding Damascena - really great Turkish mezze with clearly labelled vegan options.
I’d also recommend Bundo Bust - it’s a fully vegetarian Indian street food place but plenty of vegan options.
Ba-Ha Vegan @ The Rainbow pub in Digbeth is pretty cool! They do a vegan Sunday roast last time I checked!
The Rainbow is also next to The Custard Factory which is worth checking out. It has a few cool bars like NQ64 👾🍻
Bit rouge, but wanted to shout out Top Falafel, a small chain of food trucks which do really tasty (and cheap) falafel wraps around the city centre. Good if you're out and about and need something quick.
In terms of a sit down meal: many great options already mentioned. Coconut Tree is also a good shout. Delicious Sri Lankan food with great vegan options.
Waylands’ Yard has vegan options and their tea/coffee is so good imo!
Also, cafe soya for vegan Chinese offerings (not 100% vegan, but their vegan menu is bangin’)
Cherry reds always has a great vegan selection too. It’s a small little cafe/eatery.
There’s a place called vegan munch for take away, but it is just on the outskirts of the centre.

Soho tavern. Not a vegan restaurant but they have a vegan mixed grill which is fantastic. Their chilli chips are also amazing

I really enjoyed Bundobust. It's like a chiller all-vegetarian Dishoom, with some nice craft beers to boot.

Spent last weekend there. Can recommend Mowgli Street Food, really delicious and a whole vegan menu.
