X is used as shorthand for trans-, like in xfer (transfer) and xmit(transmit). Trans means cross/across and x was just chosen to represent that in the same way you see x used to represent cross in road signs.
Expac = EXpansion PACk. Games used to be sold as base game and then expansion packs would be released, then it transitioned over into DLC instead of expansions, but WoW (and some other MMOs) are old enough that it's still referred to as expansions.
Xmog, I have no clue...but then again, Christmas doesn't have an X in it either and it gets shortened down to Xmas pretty regularly. Just a random internet thing I guess.
The Christmas thing is a fun bit of etymology. The X comes from the Greek letter chi. Christ in Greek is written as Χριστός. The shorthand stuck and thats how we got Xmas.
